  • 5 cups leafy greens (spinach, baby lettuce, spring mix)
  • 1 baby cucumber
  • 2 small sweet peppers
  • 5-6 grape tomatoes
  • ½ small avocado
  • ¾ cup low sodium, canned or homemade chickpeas (or black-eyed peas, mung beans, black beans, cannellini beans)
  • 1/3 cup cooked quinoa (cook as per directions on the box)
  • 1 ounce of feta cheese
  • 2 oz. canned tuna or 2 hard boiled eggs or baked chicken (OPTIONAL)
  • 1 tbsp fresh lemon juice
